Marcus Reilly has cooked competition barbecue for 15 years and judges sanctioned KCBS contests. At SmokyHQ he runs the low-and-slow side of our test program: pellet grills, charcoal kettles, offsets, kamados and dedicated smokers.
His reviews focus on what matters once the novelty wears off — how tightly a controller holds 225°F through an overnight brisket, how much a cooker drifts in wind and cold, how fast coals or pellets burn, and whether the bark, smoke ring and moisture are good enough to serve to people who care.
